The Secret is in the Spice
Many ask us, "What makes your Manthi so different?" The answer lies in our proprietary spice blend. Unlike generic mixes, our spices are sourced directly from trusted traders who import premium cardamom, cloves, and dried lime (loomi) from the Middle East. These are ground in-house to preserve their volatile oils, ensuring that every bite carries a burst of authentic aroma.
The Art of the Clay Oven
Our cooking process respects the traditional 'Mandi' technique. The chicken is marinated for 12 hours to allow the flavors to penetrate deep into the meat. It is then suspended in our specially designed tandoor (clay oven) over glowing embers. As the chicken slow-cooks, its juices drip down onto the rice pots placed below. This natural basting process infuses the rice with a rich, savory essence that no artificial stock can replicate.
The result? Chicken so tender it falls off the bone, paired with rice that is fluffy, aromatic, and distinctively Alrazi.
